Mill stones come in pairs, but only the top or runner stone rotates. The bottom stone does not rotate and is known as the bed stone. The space between the stones has to be carefully gauged, to obtain best grinding results. As the grain is ground it is guided out to the edge of the stones by grooves known as furrows cut in the face of each stone.
